Star Wars cookies

My husband and my son love Star Wars!  They watch the movies all the time.  They even build a fort and call it 'yoda's house' so they can watch the movie in there.  

When I saw these cookie cutters... I just had to buy them.


Yup, they are well worth it!

Oatmeal Chocolate Chip Cookie

 (this is the best recipe I've found - I've made a few tweeks that I think made them even better)
Ingredients:
1 cup (2 sticks) butter
1 cup brown sugar
1 cup white sugar
2 eggs
1 tsp vanilla
1.5 cups white flour
1 tsp baking soda
1/2 tsp salt
3 cups oatmeal
2 cups chocolate chips (I use 1 cup semi or milk chips and 1 cup white chips)
1/2 cups cinnamon chips (adds extra kick of flavor)
option - add 1/2 cup walnuts (my personal favorite)


350 degrees Fahrenheit

Mix sugars and butter together. Soften the butter before hand. (You can microwave the butter but it just doesn't work out as well).  Add eggs and vanilla, mix.  Mix in flour, salt and baking soda.  Mix in the oatmeal.  Stir in chocolate chips, cinnamon chips, and optional nuts.
The finished dough won't look like your typical non-oatmeal dough since there's less flour in it.  Bake for 10-15 minutes. - Original recipe states to take the cookies out before they look totally done (usually around 12 min), leave them on the sheet for 3 to 5 minutes then remove to flat surface to cool.

Soft Ginger Snaps

(From Girls Night Out)
1 1/2 cups vegetable oil (or 3/4 cup butter or margarine, softened--but, I like the oil better)
2 cups sugar
2 eggs
1/2 cup molasses
4 cups flour
4 teaspoons baking soda
1 teaspoon salt
1 tablespoon ginger
2 teaspoons cinnamon
granulated sugar for coating

In large mixing bowl beat oil, sugar, eggs and molasses together well. Sift dry ingredients and stir into butter mixture until blended. Refrigerate dough for 1 hour. Preheat oven to 350. Form into balls (I think it works better to make them kind of small). roll each ball in granulated sugar and bake on ungreased baking sheet for 6-8 minutes. Do not overbake. Cookies will be puffy when removed from oven, but wil flatten as they cool. Tops will look cracked. Cool on rack.

my new FAVORITE choco chip cookies!

I've been stuck on the same (but definiatley good) chocolate chip cookie recipe. I've almost perfected the Mrs. Fields one, but I hate that it makes SO much! I've tried cutting it in half before, but it doesn't quite taste the same for some reason. Then I happened upon this recipe and it's my new fav! It makes just over 4 dozen with the small (I think) pampered chef cookie scoop.



Here's the recipe:

1 cup butter (softened)
1 cup brown sugar
3/4 cup sugar
2 eggs
1 Tbls. vanilla
3/4 tsp. baking soda
3/4 tsp. salt
3 cups flour
1 package Ghirarrdeli Milk Chocolate Chips
1/2 bag Ghirarrdeli Semi-Sweet Chocolate Chips

Cream butter and sugars. Add eggs and vanilla. Then add dry ingredients. Mix in chocolate chips. Bake at 350 for 11 minutes. Cookies might not look done but take them out anyways. Let them sit on pan for a few minutes before placing on cooling rack.

FYI: I cooked mine for 8-9 minutes and they were perfect. I think 11 minutes would be too long... but it all depends on your oven. I suggest you cook them for a shorter time first then see if it needs more time or not. Also, the first time I made these, I used the Ghirradeli chips, but this time I used regular off brand ones and they are

Skookies

One of our favorite restaurants in S. California is BJ's, they have the best dessert called a Pizookie. Last year a company invented a similar item called a Skookie pan so you can make them yourself at home. Our awesome friend Katie got us it for Christmas, and we are just now getting around to using it. Basically it is just a cast iron skillet, and you add your favorite cookie dough and bake.
Tonight, Debra just used a Betty Crocker chocolate chip cookie mix, popped them in a 350º oven for about 10 minutes. After taking them out of the oven while they are still hot, you top them with some good vanilla bean ice cream.... delicious!

Homemade oreos!

These are probably the yummiest naughty treat ever and they're much easier than I thought, so here's the recipe:

2 pkgs. Devils Food Cake Mix (I used 1 Devils and 1 regular chocolate and they were perfect!)
1 c. crisco shortening (the sticks are easiest!)
4 eggs


Mix 1 box with shortening and eggs in large bowl, then add the second box. You may have to use a hand held blender to get it mixed well.
Roll dough into balls (I used the med. size cookie scooper and split that in 1/2 and rolled them to make the not as ginormous).

Bake @ 350 for 9-11 minutes. Let cool, and use canned Cream Cheese frosting and sandwich them together and enjoy!

kisses!


This is a silly recipe because it's so easy, and it's one of those I can make really quickly (because I totally cheat!) and they're super yummy! I've been asked several times for my peanut butter cookie recipe... love that! All I do is roll the dough into balls, roll them is sugar and bake them for 7 1/2 minutes (I like anemic cookies- ask my mom), and then my girls love to help unwrap the hershey kisses (with clean hands mind you) and we squish them in the middle together!
Ta-da!

Scottish Short Bread



Scottish Short Bread

4¼ c Flour
1 c sugar
1 c powder sugar
1 lb butter
1 t vanilla
½ t salt
food coloring (optional)

Mix sugars with butter... add flour, salt, & vanilla gradually. Pat into a jelly roll pan & bake at 350º for 20 minutes. While still warm, cut with metal cookie cutter into cute shapes, or cut with a knife into bars. These are really tasty!! (food coloring may be added for a cuter look or to fit an upcoming holiday)

Snickerdoodles

*If you can find cinnamon chips they are a great addition to this recipe! (Lately we have only been able to find them during the holidays)

Snickerdoodles

1 c. butter
2 c. sugar
2 eggs
3 ¾ c. flour
¼ c. milk
½ tsp cream of tartar
½ tsp baking soda
½ tsp salt
1 tsp vanilla
3 Tbsp sugar
2 tsp cinnamon
* 10 oz. bag cinnamon chips

Cream together butter, sugar, eggs & milk. Slowly add cr. of tartar, soda, salt, & flour. Roll into balls about 1½ inches in diameter and roll into sugar and cinnamon mixture. Place 2 inches apart on un-greased baking sheet. Bake for 8-10 minutes until set. Immediately remove from baking sheet.





These are really delicious when they first come out of the oven- yummy! We have found that underdone is much better, they stay soft.

Chocolate Chip Cookies

Let's start off with a classic... Chocolate Chip Cookies!
This recipe has been in our family for years. So yummy! I made these with white chocolate, but they are just as tasty with milk chocolate.
(Sorry for the bad picture, I'm new at this.)Chocolate Chip Cookies
1 lb. butter
2 c. packed brown sugar
1 ½ c. sugar
3 eggs
2 Tbls. vanilla
1 ½ tsp. salt
1 ½ tsp . baking soda
6 c . flour
4-6 c. chocolate chips
2 c. nuts (optional)
Beat butter with sugar, vanilla and eggs. Add dry ingredients and continue to beat. Dough will be dry. Add nuts and chips.
Bake 350 degrees for 10 minutes. Makes 4-5 dozen cookies
