Banana Bread

I found this yummy (and easy) recipe for Banana Bread, here.
It was really easy to make... I recommend giving it a try!

Banana Bread
1/2 c butter (1 stick), at room temperature
1 c sugar
2 large eggs
1 1/2 c flour
1 tsp baking soda
1 tsp salt
1 c very ripe bananas, mashed (~3 bananas)
1/2 c sour cream
1 tsp vanilla extract
1/2 c chopped pecans or walnuts (optional)
Preheat oven to 350 degrees. Butter 9x5x3 inch loaf pan; set aside. With an electric mixer, cream butter and sugar until light and fluffy. Add eggs and beat to incorporate. In a medium bowl, whisk together flour, baking soda and salt. Add to butter mixture and mix until just combined. Add mashed bananas, sour cream and vanilla; mix to combine. Stir in nuts (if desired) and pour into pan. Bake until cake tester inserted into center of loaf comes out clean, about 1 hour. Let rest in pan for 10 minutes, then turn out onto a rack to cool.
*the original recipe said 1 hour 10 minutes but I overbaked mine so many times that I finally just changed it to 1 hour. It's better to check on it early than too late!

Banana Nut Muffins w/ Oatmeal Streusel

Muffins:
2 cups all-purpose flour
2/3 cup packed brown sugar
2 teaspoons baking powder
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup mashed ripe banana (about 2 bananas)
3/4 cup milk
3 tablespoons canola oil
1/2 teaspoon vanilla extract
1 large egg
1/4 cup chopped walnuts, toasted

Streusel:
6 tablespoons regular oats
4 tablespoons all-purpose flour
2 tablespoons brown sugar
2 tablespoons butter, softened
1/4 teaspoon ground cinnamon

Preheat oven to 375°. To prepare the muffins, lightly spoon 1 1/2 cups all-purpose flour and whole wheat flour into dry measuring cups; level with a knife. Combine flours and next 4 ingredients (through salt) in a large bowl; make a well in center of mixture. Combine banana and next 4 ingredients (through egg) in a bowl; stir well. Add to flour mixture. Stir just until moistened; fold in walnuts. Place 12 muffin cup liners in muffin cups. Spoon batter into 12 muffin cups.
To prepare streusel, combine oats and remaining ingredients in a small bowl. Blend with a pastry blender or 2 knives until mixture resembles coarse meal. Sprinkle streusel over batter. Bake for 22 minutes or until a wooden pick inserted in center comes out clean.

Reese's Peanut Butter Banana Bread

Another yummy recipe found on the Picky Palate. I did a little adapting of my own- I added a little vanilla, and I only had crunchy peanut butter which worked out just fine. I also made it into a bundt pan and one small loaf pan instead of the 3 loaves. This turned out so delicious!! I will definaltly be making this one again. (Even my mom who is not a peanut butter and chocolate fan liked this recipe) We took this to the baby shower today also and everyone loved it.



Reese's Peanut Butter Banana Bread

3 Sticks softened butter
2 Cups sugar
5 eggs
¼ Cup peanut butter
1 teaspoon cinnamon
1 teaspoon baking soda
¼ teaspoon salt
½ teaspoon vanilla
1 small box vanilla pudding mix (4 serving size)
2 Cups flour
5-6 ripe bananas

20-30 reese's peanut butter cup minis

½ Cup powdered sugar
1 Tablespoon peanut butter
2-3 Tablespoons milk

1. Preheat oven to 350ยบ F. Cream the butter and sugar until smooth. Add eggs until smooth. Add peanut butter, cinnamon, baking soda, salt, pudding mix and flour until combined. Stir in bananas and Reese's.

2. Pour batter into 3 greased bread pans. Bake 45-60 minutes or until toothpick comes out clean from center of each loaf. Let cool.

4. Place powdered sugar, milk and peanut butter in a bowl. Whisk until smooth and drizzling consistency.

5. Drizzle over each loaf.
